Zero Carb Breaded Fish

  • 16 oz thawed fish filets (tilapia, cod, or your choice)
  • 1/4 cup of mayonnaise (or more as needed)
  • 3 1/2 oz bag of pork rinds
  • 2 tbsp dry cajun seasoning (I use Tony Chachere’s)
Preheat oven to 450 degrees. Crush pork rinds (I leave them in the bag and crush them with a rolling pin). Mix the crushed rinds with seasoning in a bowl. Slather mayonnaise on both sides of each filet in a shallow dish, then dip in pork rinds until well covered. Place breaded filets on greased baking sheet. Cook for 15-20 minutes.
